This strawberries and cream semifreddo is wonderfully creamy and packed with fresh strawberries. It is the perfect cooling dessert for a hot summer’s day, especially when the strawberries are ripe, fragrant and full of flavour.

While homemade ice cream is delicious, it can involve a little more work. Semifreddo is a much simpler alternative: there is no churning and no ice cream machine. Once the mixture is prepared, simply spoon it into the tin and leave the freezer to do the rest.

I particularly love making this when strawberries are at their best — especially when I can pick them straight from the garden. However, you can also use frozen strawberries when fresh ones are out of season.

The semifreddo needs at least six hours in the freezer, so it is ideal for making ahead. Prepare it earlier in the day or, even better, leave it to freeze overnight.

Why You’ll Love This Strawberries & Cream Semifreddo

One of the best things about semifreddo is how little work is involved. You get the rich, creamy feel of a frozen dessert without needing to churn the mixture or use an ice cream machine.

Strawberries and cream are such a natural combination, and here the fruit is used in two ways. Half is cooked with sugar to create a concentrated strawberry mixture, while the remaining berries are folded through before freezing.

Meanwhile, whipping the cream and beating the eggs incorporates plenty of air, helping to create that light semifreddo texture once frozen.

Most importantly, it is an excellent make-ahead dessert. Once it is safely tucked away in the freezer, there is very little left to do apart from unmoulding, decorating and serving.

Ingredients and Substitutions

Strawberries & Cream Semifreddo

  • Strawberries: Use 300 g strawberries, washed with the stalks removed. Half are cooked with the sugar, while the remaining strawberries are cut into halves or quarters and folded through the semifreddo. Fresh, ripe strawberries are particularly lovely, although frozen strawberries can also be used when fresh berries are out of season.
  • Caster sugar: Use 100 g caster sugar. It sweetens the strawberries and forms part of the cooked fruit mixture.
  • Strawberry liqueur: Use 25 ml strawberry liqueur, if you like. It is optional, so simply leave it out if you prefer an alcohol-free semifreddo.
  • Double cream: Use 300 ml double cream, also known as heavy cream in the US. Whipping it to soft peaks gives the semifreddo its light, creamy texture.
  • Vanilla: Use 1 teaspoon pure vanilla extract or ¼ teaspoon vanilla paste. Vanilla rounds out the flavour of the cream and strawberries.
  • Eggs: Use 2 medium eggs, approximately 120 g in total. The whole eggs are whisked until foamy before the hot strawberry mixture is gradually beaten into them.

How to Make Strawberries & Cream Semifreddo

Prepare the Tin

1. Prepare and chill the tin: Line a 900 g / 2 lb loaf tin or earthenware dish with cling film, leaving an overhang of approximately 5–6 cm / 2 inches on all sides. Place the prepared tin or dish in the freezer for at least 20 minutes before you are ready to fill it.

Make the Strawberry Mixture

2. Cook the strawberries: Place half of the strawberries, the 100 g caster sugar and the 25 ml strawberry liqueur, if using, in a small saucepan over medium heat. Stir until the sugar dissolves, then simmer for 8–10 minutes, until the mixture has reduced by approximately half.

Whip the Cream

3. Whip the cream: Pour the 300 ml double cream into a large mixing bowl and add the vanilla. Whip on high speed for approximately 2–3 minutes, until soft peaks form.

4. Chill the whipped cream: Return the bowl of whipped cream to the refrigerator while you continue with the remaining steps.

Make the Egg and Strawberry Mixture

5. Whisk the eggs: Place the 2 medium eggs in a large mixing bowl and beat on medium speed for approximately 1 minute, until foamy.

6. Add the hot strawberry mixture: With the mixer running, slowly pour the hot strawberry mixture into the eggs in a thin, steady stream.

7. Continue whisking: Beat for approximately 8 minutes, until the mixture becomes very light and fluffy and feels cool to the touch.

Combine and Freeze

8. Add the strawberries and cream: Cut the remaining strawberries into halves or quarters. Add them to the egg mixture along with the chilled whipped cream.

9. Fold everything together: Using a large spoon or silicone spatula, gently fold the strawberries and whipped cream through the egg mixture until evenly incorporated. Avoid stirring vigorously, as you want to preserve as much of the incorporated air as possible.

10. Fill the tin: Remove the prepared tin or dish from the freezer and pour or spoon the semifreddo mixture into it.

11. Freeze: Cover securely using the overhanging cling film, then return the semifreddo to the freezer. Freeze for at least 6 hours, preferably overnight.

Serve the Semifreddo

12. Unmould and serve: Unwrap the semifreddo and invert it onto a serving plate, or serve it directly from the earthenware dish. If using a loaf tin, lift away the tin and carefully remove the cling film. Decorate with additional fresh strawberries and serve immediately.

Variations

Add Warm Spices

Try adding ½ teaspoon cinnamon, cardamom or nutmeg to the cream for a gently spiced version.

Add Fresh Herbs

Fresh basil or mint pairs beautifully with strawberries and gives the semifreddo a slightly different summer flavour.

Add Citrus

Finely grate a little lemon, lime or orange zest into the sugar for extra freshness.

Change the Fruit

The same idea can be adapted with other seasonal fruits, including blueberries, raspberries, peaches or cherries.

Serve With a Berry Coulis

For an easy berry coulis, wash, hull and quarter 250 g strawberries or another soft fruit.

Add 50 g icing sugar and ½ teaspoon lemon juice, if using, then leave the fruit to stand for 10–15 minutes.

Blend until smooth, then pass the sauce through a fine-mesh sieve for an extra-smooth finish.

Choose Ripe Strawberries

This is a strawberry-led dessert, so the quality of the fruit makes a noticeable difference.

Look for ripe, fragrant strawberries with plenty of natural sweetness. When strawberries are out of season, frozen berries can also be used.

Don’t Overwhip the Cream

Whip the cream only until it reaches soft peaks.

The aim is to incorporate plenty of air while keeping the cream soft enough to fold easily into the remaining mixture.

Add the Hot Strawberry Mixture Slowly

Pour the hot strawberry mixture into the foamy eggs in a thin, steady stream while continuing to whisk.

Adding it gradually allows the hot fruit mixture to combine evenly with the eggs rather than adding it all at once.

Fold Rather Than Stir

When combining the whipped cream and strawberries with the egg mixture, use a large spoon or spatula and gently turn the mixture over itself.

This helps preserve the air you have already incorporated into the eggs and cream, giving the finished semifreddo a lighter texture.

Chill the Tin First

The lined loaf tin or dish should spend at least 20 minutes in the freezer before filling.

Preparing it first means it will already be properly chilled by the time your semifreddo mixture is ready.

Freeze Overnight When Possible

Six hours is the minimum, but leaving the semifreddo in the freezer overnight is even more convenient and ensures it is completely set before serving.

Does Semifreddo Need an Ice Cream Machine?

No. This strawberries and cream semifreddo does not need churning or an ice cream machine.

The air incorporated into the whipped cream and beaten eggs helps create its light frozen texture.

How Long Does Strawberries & Cream Semifreddo Need to Freeze?

Allow at least 6 hours.

For the most convenient result, prepare it the day before and leave it in the freezer overnight.

Can I Use Frozen Strawberries?

Yes. Frozen strawberries are a useful alternative when good fresh strawberries are out of season.

Can I Leave Out the Strawberry Liqueur?

Yes. The 25 ml strawberry liqueur is optional and can simply be omitted.

They are beaten until foamy, then the hot strawberry mixture is gradually whisked into them.

Can I Make the Semifreddo Ahead?

Yes. It is particularly well suited to making ahead because it needs at least six hours in the freezer and can be left overnight.

Can I Use Another Storage Vessel Instead of a Loaf Pan?

Yes. I use a loaf pan because it gives the semifreddo a lovely shape and makes it easy to turn out. If it is a little reluctant to release, simply wrap the outside of the pan briefly with a warm towel to loosen it.

If you would rather not turn the semifreddo out as one large piece, an earthenware dish or freezer-safe container works just as well. You can then simply scoop the semifreddo straight from the container when you are ready to serve.

This heavenly strawberries and cream semifreddo is super creamy and full of fresh strawberries, the perfect cooling dessert to prepare and eat on a hot summer's day.

INGREDIENTS LIST
 

  • 300 g strawberries (washed and stalks removed)
  • 100 g caster sugar
  • 25 ml strawberry liquor (optional)
  • 300 ml double cream (US: heavy cream)
  • 1 tsp pure vanilla extract or 1/4 tsp of vanilla paste
  • 2 medium eggs (110g)

Preparation
 

  • Line a 900g (2lb) loaf tin or earthenware dish with cling film, leaving an overhang of 5-6 cm (2 inches) on all the ends. Chill the pan/container (see notes) in the freezer at least 20 minutes before you are ready to start.
  • Place half the strawberries, sugar and liquor (if using) into a small saucepan over a medium heat and stir to dissolve. Simmer until reduced by half (8-10 minutes).
  • In a large mixing bowl, pour in the cream and vanilla extract and whip the cream at high speed until soft peaks form, about 2-3 minutes.
    Return the bowl with the cream to the fridge while proceeding with the next steps.
  • In a large mixing bowl, beat the eggs on medium speed until foamy, about 1 minute. With the mixer running, slowly add the hot strawberry mixture into the eggs in a thin stream. Continue beating until the mixture is very light and fluffy and feels cool to the touch (approx. 8 minutes).
  • Cut the remaining strawberries into halves or quarters and add them to the egg mix with the whipped cream. Gently fold them in until incorporated.
  • Remove the prepared container from the freezer and pour or spoon the mixture into it. Cover securely with the overhanging plastic wrap and return to the freezer. Freeze until set, at least 6 hours, preferably overnight.
  • Unwrap and invert onto a serving plate or serve in the earthenware dish, lift off the pan and remove the plastic wrap. Decorate with additional strawberries and serve immediately. Enjoy!

Notes & Tips

Note: I use a loaf pan because it gives the semifreddo a neat shape and makes it easy to turn out. If it does not release straight away, briefly wrap a warm towel around the outside of the pan to loosen it. Alternatively, use an earthenware dish or freezer-safe container and simply scoop the semifreddo straight from the container to serve.
