This cherry Bakewell tart is not the typical version found across Britain, but my very own recipe uses fresh cherries instead of jam and just a light icing on top.
This sour cherry ricotta tart originates from southern Italy where crostata di ricotta is common. The buttery tart shell is filled with creamed ricotta and topped with sour cherries. And for that extra treat, it can be served with cream or ice cream.
Sour cherry pudding, crunchy around the edges and creamy in the middle. It has a cake-like texture but is best eaten with a spoon. So simple to make and I love it served warm with a scoop of vanilla bean ice cream on the side.
